Dal Bati and Churma

A traditional rajasthani delicacy recipe made from dal, bati or wheat rolls and churma which is powdered wheat ball. It is generally served for lunch or dinner by mixing the dal with crushed baati and ghee topped on it. It is also popular in uttar pradesh and madhya pradesh within the malwa regions. #boxweek6

Cooking instructions

* Step 1

Take all the ingredients for baati in a large bowl. Mix them well making sure that the dough is moist.

* Step 2

Now add water as required and knead a dough. The dough must be slightly stiff as compared to that of a puri.

* Step 3

Now pinch a small sized dough and roll it. Similarly roll the entire dough!

* Step 4

Now place all the balls in baati oven. Keep flipping them at regular intervals so that they do not burn from one side. When they turn slight golden brown and show slight cracks, that is the time when they are ready. Deep them in ghee.

* Step 5

Now for churma, take 3 prepared baati and break into mixi. Make coarse powder of baati.

* Step 6

Then heat tawa with 2 tbsp ghee and toast powdered baati. Roast on low flame till it turns golden brown and aromatic.

* Step 7

Cool the mixture completely. Then add sugar and chopped cashews and almonds and cardamom powder. Mix well. Finally churma is ready!

* Step 8

Now, take all the dal in a pressure cooker and add ghee and water. Pressure cook it for upto 4 whistles.

* Step 9

Now in a kadhai add mustard and cumin seeds and pinch asafoetida. Add onion, ginger garlic paste and green chilli and saute well. Then add tomato and saute well.

* Step 10

Then add the remaining spices and saute them on low flame. Then add the cooked dal and 1 cup water and mix.

* Step 11

Let it cook for about 5 minutes. Then add coriander leaves and mix well.

* Step 12

Finally serve dal, baati and churma along with slices of onion and green chilli and lemon.
