Mushrooms risotto

Mushrooms risotto

Ingredient

fresh parsley

100 ml

Olive oil

1 pinch

salt

100 ml

white wine

Cooking instructions

* Step 1

Chop the onion, garlic and parsley

Wash and hydrate the mushrooms

* Step 3

Heat a flat pan with olive oil and fry the onion, garlic and parsley at high heat for 2-3 minutes.

Add the mushrooms and keep frying for another 5 minutes

* Step 5

Add the white wine to the pan, mix everything and let the wine evaporate

Boil the rice and strain but don't wash it after that

* Step 7

Add the rice and mix it with the rest of the ingredients. (Optional) Add the mushrooms sauce to give the right consistency to the dish and increase the mushroom taste. (Optional 2) Sprinkle some goat cheese on top after serving, in fits very well the earthy flavour of the mushrooms.
