Each state in South has it's version of Sambar. You can make Sambar with or without coconut. This delicious Sambar comes from Malabar region with coconut and flavoured with coconut oil. Do not substitute coconut oil for any other oil

Cooking instructions
* Step 1
Soak tamarind in warm water for 45 minutes
* Step 2
Clean toor dal. discard the water
* Step 3
In pressure cooker, add dal, turmeric and water. pressure cook until done
* Step 5
Heat oil in a pan, add dals and fenugreek seeds. saute until brown
* Step 6
Add coriander seeds, dry red chillies, shallots/onion and curry leaves. mix
* Step 7
Add coconut and saute until golden brown
* Step 9
Pressure cook vegetables for 1 whistle with little water and 1/4 tsp turmeric
* Step 10
Grind cooled mixture with water to smooth paste
* Step 11
Add dal, tamarind water, ground paste, tomatoes, salt, bhendi to cooked vegetables
* Step 12
Bring to boil, simmer and cook for 15-20 minutes
* Step 13
Heat oil in a small pan. add hing and splutter mustard seeds
* Step 14
Add dry red chillies and curry leaves. saute for 2-3 seconds.
* Step 15
Add coriander leaves seasoning to sambhar. mix well.
* Step 16
Serve hot with rice/idli/dosas etc
