Ingredient

2 Cups

Mayonnaise

2 tablespoons

Mustard

1/4 tablespoon

Black pepper

1/4 tablespoon

salt

1/2 tablespoon

Paprika

Cooking instructions

* Step 1

Clean and peel one 5lb bag of red potatoes. Rinse the potatoes well to remove extra starch left on the potatoes. Cut the potatoes in to large cubes and rinse a second time to remove anymore starch release from the cutting process.

* Step 2

In a large pot add your potatoes and boil until potatoes are cooked through. Once potatoes are cooked strain the potatoes and Transfer to a large bowl. Let the potatoes cool until room temperature or place in fridge for 20 minutes to cook down.

In a large mixing bowl add chopped red onion, green onion, olives, pimentos, and chopped eggs.

Mix in your mayonnaise, sweet pickle relish, mustard and spices (salt, pepper, paprika). This step you can also add bacon bits if you choose. Stir until we’ll combine.

Take your cooked potato in a separate bowl and mash. Do not mash completely smooth. You are looking for a chunky consistency.

Once mashed, add to vegetables and mayonnaise mixture. Stire until we’ll combined. Add a sprinkle of paprika on top (optional).

Chill until ready to be served at your next gathering!
