Eggplant cheese sandwich in raw mango gravy

Cooking instructions
* Step 1
Wash the eggplant, cut rounds and half it like semi circle. Fry them one side of it on nonstick pan with very little oil.
* Step 2
Take a one semi circle of eggplant, keep roasted side up, put grated cheese on it now sandwich it with other semi circle keeping roasted side in. Make all sandwich of eggplant pieces, make sure each sandwich have outer raw side. Now roast outer side of sandwiches and keep aside.
* Step 3
Grind onion, garlic and ginger in mixer.
* Step 4
Take a wok, keep it on flame. Heat the remaining oil in it add cloves and cumin, when splutter add onion garlic ginger paste, fry them till golden brown. Now add all spices and fry for a minute. Now add raw mango puree and fry it for a minute. Now add 1 cup water boil it for 2-3 minutes. Raw mango gravy is ready.
* Step 5
Take a serving bowl, pore gravy in it. Now gently place eggplant sandwich on it now decorate with remaining cheese and serve hot.
