Okaka - bonito rice seasoning
Dried bonito contains a lot of umami component. Okaka is common to be used as rice seasoning and filling for onigiri.
Cooking instructions
* Step 1
Put water in a small saucepan and make it to a boil.
* Step 2
Turn off the heat and add the bonito flake. Leave to sit for 3 minutes.
* Step 3
Add the sugar and simmer for 2 minutes. Add the soy sauce and the honey. Cook down until the liquid is gone.
* Step 4
Turn off the heat and mix the sesame seed in.
