Simmered Sweet Potatoes

This is one of our mother's home cooking in Japan. The taste soaks in after the next day. If you like, I recommend that you add a squeeze of lemon or lemon slices when simmered. Sometimes I make this with raisins in it. It's also so nice! Please give it a try.

Cooking instructions

* Step 1

Peel sweet potatoes and cut into 2 cm thick round slices. Soak them in salted water for about 10 mins, and wash lightly.

* Step 2

Place the sweet potatoes, just enough water to cover them, all seasonings in a pot and simmer over low heat with a lid until they are tender and properly cooked.
