Carotenoids Smoothie

Cooking instructions
* Step 1
In a 1-quart saucepan, boil the sweet potato until fork-tender, about 15 minutes. With a slotted spoon, remove the sweet potato from the heat and add it to the blender. Blanch the apple in simmering water for 1-2 minutes. With a slotted spoon, remove it from the heat and add it to the blender.
* Step 2
Add the coconut oil and pumpkin pie spice and blend on high speed for 1 minute. Add 12 oz of cold water and blend on high speed for 2-3 minutes, or until smooth. Turn off the blender and check consistency. Add water as needed. This recipe may need as much as 16 oz of water and may make 1-2 hearty servings, depending upon sweet potato and apple size. Serve warm or chilled.
* Step 3
Try this one warm. Make it thick, serve it in a bowl, and eat it with a spoon. It's decadent with a little coconut yogurt either blended in or dolloped on top.
