Ejjeh - Lebanese style omelette
This is one of the number 1 fridge cleanup food in Lebanon. The original version of it has only parsley and onions as veggies, but people often add to it whatever they have in the fridge that needs to be used up.

Cooking instructions
* Step 1
Beat the eggs with the cinnamon, black pepper, allspice and salt
* Step 2
Add all the chopped vegetables with the flour and baking soda. Mix until combined.
* Step 3
In a frying pan add a generous amount of vegetable oil mix with a little bit of olive oil. Around 0.5cm deep. Although you can add more and deep fry them in a wok but i prefer pan fried ones.
* Step 4
Add a few drops to the oil to check if it’s ready. Start adding a spoonful of the mixture to the oil and keep the heat on medium to high
* Step 5
When the edges turn golden brown, flip the omelette and cook again for a few minutes on the other side
* Step 6
Once both sides are golden brown and crispy, place on a kitchen towel.
* Step 7
You can enjoy it with bread and/or a bowl of greek yogurt on the side.
