Baked John Dory fish with lemon, garlic and rosemary

#sundayfish #spinylobster #eattheseason #fishoftheday Always trust your local fishmonger. Yesterday I went to the Spiny Lobster in Bristol and asked the fisherman for his recommendation. He gave me John Dory which was amazing! Meaty, rich in flavours and so delicious.

Ingredient

Cooking instructions

* Step 1

Preheat the oven to 200C. Rub the fish with olive oil from the outside and inside

* Step 2

Place the fish on a baking paper, fill the cavity with rosemary, lemon slices, garlic, salt and 2 small cubes of butter

* Step 3

Add some more salt on top, butter and rosemary and to the over for 20 minimum

* Step 4

Put under the grill form another 5 minutes. Enjoy!
