Taro with tahini and orange juice - Beiruti style (vegan friendly)
Today I replicated my aunt’s recipe and I was sooo happy that it tasted the same! She used to prepare it on Saturdays when all the family used to gather at my grandpa’s house in Beirut. #lebanesecooking #lebanese #vegan
Cooking instructions
* Step 1
Peel, rinse and cut the taro into cubes
* Step 2
In a pan add some vegetable oil, enough to cover half of each taro cube
* Step 3
Fry for 10 minutes on each side and put aside. Don’t overcook them because you’ll cook them later in the tahini sauce.
* Step 4
In another pot, add a bit of oil, fry the onion and garlic until soft.
* Step 5
Pour the cup of tahini, turn the heat down to medium and start to gradually add the orange juice every 100ml at a time
* Step 6
It’s like making risotto you need to be patient. Add a bit of orange juice, mix, the tahini will get thick, add more orange juice, mix again, repeat every time the tahini is thick until its texture is finally smooth and creamy.
* Step 7
Add the cooked taro, keep the heat on medium and stir veryyy gently. Keep stirring everything 5-7 minutes to make sure the tahini and taro don’t stick to the bottom of the pot.
* Step 8
Around 30 minutes later a yellow oil from the tahini will form on the surface. This means you successfully cooked the tahini sauce!
* Step 9
Serve with rice or simply enjoy it with flatbread.
