Baba gannouj or Monk’s salad - salatet al rahib

Another tasty Lebanese salad served as mezze 😁 Approved by @kmatsuno 🙌🥳

Cooking instructions

* Step 1

Preheat your oven (180C) and follow the steps 1-2-4-5 in the attached recipe. You can also chargrill the aubergine or cook it on open fire on the hob (see step 8 in the attached recipe)

Mix the dressing ingredients

* Step 4

Roughly chop all the vegetables and add them to the chopped aubergine

Add the dressing and toss well. Taste and adjust with salt and pepper as needed

* Step 6

Pour a (good) drizzle of olive oil on top and a few mint leaves and crushed walnuts for decoration. Serve with pita/flat bread PS: I used very ripe and juicy tomato which I’ll avoid next time because it made the salad watery and it’s not supposed to be! :(
