Make your own Zaatar at home 🌿

#foodfromhome #recipefromhome - Zaatar in Arabic can mean two things: the spice blend or the herb plant itself. In the Levant (Jordan, Lebanon, Syria and Palestine) thyme and wild oregano are referred to as Zaatar plants.

Cooking instructions

* Step 1

Here are the main three ingredients you will need (i recommend mixing both thyme and oregano leaves for a bolder taste but add more thyme than oregano)

Dry fry the sesame seeds until golden brown

Grind the dried oregano, thyme leaves and salt with a pestle and mortar with almost 1/4 the quantity of the toasted sesame seeds.

If you don't have dried leaves you can spread the fresh ones on a tray or cloth and leave them for a few days until dry (you'll be lucky if you get some sun in the Uk to accelerate the process 🌞)

* Step 5

Now move the crushed herbs to a bigger bowl, add the sumac and the rest of the sesame seeds and give them a mix with your hand to make sure all the ingredients are well combined. And now you have your own homemade Zaatar blend!
