As a kid loved watching mom make it and now whenever I get a chance I love making it. A great ingredient in monsoon when you can't go to the market often due to rain, simply cook some curry with it with the easily available veggie like potato and have carbohydrate and protein rich curry.

Cooking instructions

* Step 1

Wash and soak the Urad Dal and Moong Dal overnight, Grind it. Add in all ingredients except the salt and mix it. Adjust the spices as per your taste.

* Step 2

Add the salt after mixing other ingredients just before giving the batter a beating of 5 to 10 minutes with hand to incorporate air because your batter should be light and fluffy and not dense so that you get a somewhat hollow Bori/ Wadia and not dense tightly packed, to see whether your batter is ready or not take a bowl of water and add a chunk of batter to it...it will not spread and sink but will float...if it floats that means your batter is done.

* Step 3

Make small/ medium-sized drops of the prepared batter on oiled steel plates or clean big oiled plastic sheets....and keep it to dry under the sun for 2 to 3 days, in places where the sun is not strong may take longer time....the Boris should be dried completely before storing...you can dry it in the electric oven too if the sun is not on your side 😊. You can prepare different curries with it, fry it and add it almost at the end of the cooking to your curries. Enjoy!
