Stuffed malpuas
These malpuas are a popular sweet in Odisha. It has a very nice flavour of fennel. Addition of fennel, gives malpua their authentic taste.
I have made these stuffed malpuas which are refined sugar free. They have the stuffing of sweetened fennel flavoured chena.

Cooking instructions
* Step 1
In a mixing bowl, add all the three flours, salt, fennel seeds and jaggery powder. Mix.
* Step 2
Next gradually add water and make a lump free batter. Add essence and baking soda. Mix. Keep covered for 3-5 minutes.
* Step 3
Meanwhile heat ghee in a kadhai. Add chena, chopped dates, kishmish, fennel seeds, salt and dates puree. Mix and cook for a while. As all the flavours combine with one another. Switch the flame off.
* Step 4
Now heat oil in a flat pan for shallow frying. Add ghee into the oil. Ghee gives nice flavour to the malpuas.
Now take ladle full of batter and pour into medium hot oil. Let it get fried and become golden brown. Flip carefully and fry the other side too. Drain extra oil.
* Step 5
Now on to the fried malpua, put generous amount of filling. Top it up with another malpua.
* Step 6
Ready to serve... STUFFED MALPUAS..
