Poori aloo bhaji (Poori aloo fry)
I love this combination...it reminds me of my bachpan...so I try making it by imitating my mumma..and it always comes out well...do try... here's for all of you Odisha special poori and aloo fry

Ingredient

Cooking instructions
* Step 1
In a mixing bowl, add wheat flour, maida, oats, salt and ajwain. Mix all. Add oil for moyen.
* Step 2
Rub and give moyen nicely so that your pooris become crispy.
Next add water gradually and knead to make a semi soft dough.
* Step 3
Brush oil on the dough, cover and keep aside for 10 minutes for resting.
As it's rested, the dough must have become soft. Knead again. Cut into small portions for poori.
Side by side heat oil for deep frying.
Oil must be medium to high hot.
On a rolling board place the small portion. Cover and keep rest of the dough portions do that they don't dry up.
* Step 4
Roll into a circle. Do not dust dry flour. It will make your oil for frying black. If it sticks on the board, brush oil and roll.
Put the poori one by one into the oil. Splash oil. It puffs up..
* Step 5
Let it turn golden brown colour. Flip sides and fry.
* Step 6
Tasty pooris are ready.
Side by side aloo fry is almost ready.
* Step 7
For the aloo fry:
Cut onion into slices. Cut potato into thin slices and keep it in water to remove extra strach.
Next heat a pan with oil. Splutter mustard seeds, cumin seeds. I didn't add green chillies since making for kids. But you certainly add.
* Step 8
Fry onion till brownish. Put salt and turmeric powder.
* Step 9
Mix well. Keep flame slow.
Cover and cook. As potatoes are cooked, add red chilli powder and coriander powder. Mix well but gently.
* Step 10
Ready...to serve hot..
Make masala chai and serve hot pooris with hot aloo fry...
