Find the best fishmonger for the day

This part has both fatty part, on the right white, and red meat on the left. Think it's a belly part. If you don't like the fatty tuna, buy a different cut, like the last photo on the right.

To make sashimi, especially on the fattier part, slice along the white line part. Then, toward the left, you can slice crossing those lines as it gets softer and easier to cut.
