Almond date eclairs

ALMONDS DATE ÉCLAIR: Almond Date Éclairs are a sweet treat that contains just three ingredients. They are made in a food processor or high-power blender. Unlike many sweet treats you might enjoy, they have fiber, protein, and healthy fats!

Ingredient

almonds

1 cup

dates

Cooking instructions

* Step 1

Soak the dates in boiling water till soft and pliable.

* Step 2

Remove the dates and deseed.

* Step 3

Make a paste of the dates in a food processor and set aside.

* Step 4

Dry roast the almonds and cool slightly.

* Step 5

Grind into a coarse powder. Reserve about 2 tablespoons of the powder and add the remaining to the date paste.

* Step 6

Knead the date paste and almonds to get soft dough.

* Step 7

Shape the date dough into small oblong bars and set aside.

* Step 8

Melt the chocolate chips and dip the date bars in chocolate.

* Step 9

Remove on parchment paper to set.

* Step 10

Once set, dip the ends of the bars in chocolate and then in coat with reserved almond powder.

* Step 11

Drizzle some chocolate on top and allow to set.

* Step 12

Serve cold.
