Everyone in my home loves bhindi aka okra aka ladies fingers vegetable so much that I make this subji every week. It's easy, quick, delicious and wholesome too . Bhindi is a nutritious , low calorie vegetable which has high fibre content. It helps in digestion and clears the stomach from constipation, bowel problems and inflammation. It's a good memory booster, helps in retaining healthy eyesight and skin. Cooking instructions

* Step 1

First, chop the cleaned bhindi in roundels after taking off the front and base part. Tip: Please ensure that the inside of okra has no work infestation or it is not blackened before cutting it

Then heat oil in a pan. Add mustard, cumin and crushed whole coriander and fennel seeds. Mix well. Add curry leaves, hing, chillies and ginger garlic paste. Stir well.

Then saute the onion till it is aromatic and golden. Then add the bhindi pieces and stir cook on low flame for 10 minutes. Don't let it get burnt from the base.

Then add the spice powders one by one and mix well by stirring with a flat spoon.

Then sprinkle some water and cover for 5 minutes on low flame till it turns soft and aromatic.

* Step 6

Mix in groundnut powder, salt sugar and cook further for 5 minutes. Then switch off the flame, garnish with chopped coriander leaves and serve with chapathi.
