Zunka Bhakar (Maharashtrian meal)

The most favourite meal of Maharashtra is Zunka Bhakri ! Zunka is a dry curry made with onions, Chillies, spices and chickpea flour . And Bhakri is a skillet flatbread made with sorghum or pearl millet flours ! Ingredient

1 tablespoon

Chopped garlic

Curry leaves

1/2 tsp

Hing

Besan

1/4 cup

Hot water

to taste

Salt to taste

to knead the dough

Boiling water

to taste

Cooking instructions

* Step 1

First to make the Zunka: Heat oil. Splutter the seeds. Add curry leaves, hing, chillies and stir cook for 5 minutes.

* Step 2

Saute the garlic and onions till translucent. Then add turmeric powder, chilli and coriander powders and mix well. Add the besan, salt, and sugar and keep stirring.

* Step 3

When the besan is Roasted well, slowly add hot water around the edges. Mix well and make sure that besan has coated the onions well. Cover and cook for 5 minutes. Make sure to sprinkle more water if needed in case the curry is dry.

* Step 4

Add lemon juice and coriander leaves. Turn off the heat. Zunka is ready to serve with Bhakri.

* Step 5

Bhakri: Knead the dough with given flours and boiling hot water. Keep covered for 5 minutes.

* Step 6

Again knead till soft and pliable. Heat skillet. Take large ball e portion of the dough.

* Step 7

Spread dry flour on a wooden polpat (platform) press the dough to a round disc. Place carefully on skillet mein

* Step 8

Moisten the top with a wet cloth all over. Cook the base. Turn and cook the moistened side. Roast on the flame to puff up.

* Step 9

Make all bhakris likewise. Apply ghee on top. Serve with Zunka, onions and pickle along with some butter on top.
