Puran Poli (पुरणाची पोळी)
Another mouthwatering delicacy of Maharashtrian Cuisine is the quintessential Puran Poli. It is a traditional age old sweet recipe made on all festivals, celebrations, ceremonies and special occasions. Wheat flour rotis are stuffed with a cooked filling bengal gram lentils and jaggery. Served with lots of ghee and Buttermilk based Kadhi . Yummy.

Cooking instructions
* Step 1
First, wash and soak the lentils for 3 to 4 hours. Strain from water and pressure cook with 1 cup water, turmeric powder and oil. Time taken upto 5 whistles.
* Step 2
Now let the pressure come down completely and add the jaggery, cardamom and nutmeg powders to it. Mash well.
* Step 3
Cook this mixture on slow flame, in a heavy bottomed pan stirring constantly till water evaporates and you have a thick mix coming off from sides. Remove from heat and cool. Then mash well and run it through a sieve or the Puran Yantra or churning machine for this purpose.
* Step 4
Mix a semi stiff dough with both the flours, salt, 1 tablespoon oil, 1 pinch turmeric powder, and water in small quantities. Cover it with a damp cloth and rest for 20 minutes.
* Step 5
Make small balls of the stuffing and also equally sized same number of balls from the dough.
* Step 6
Roll out a small thick disc from the dough ball. Stuff with the prepared ball of stuffing. Pull edges together and pinch well to seal completely.
* Step 7
Heat a skillet. Roll out a thick round chapati or disc on the floured platform from the prepared stuffed dough ball. Take care to not break the surface so the filling does not spill out.
* Step 8
Place on hot skillet, roast from both sides in medium heat.
* Step 9
Then spread ghee and roast on both sides till golden and aromatic. Serve immediately with Kadhi and more melted ghee! Enjoy!
