Payasam/ south indian kheer
Payasam is an inseparable part of southern cuisines in all states of South India. It's made from rice/ lentils/ coconut or different grains too. It's made for all special celebrations, festivals, weddings and on all special days. It's a sweet pudding that is nutrition rich and tasty to the last bite.

Ingredient

Cooking instructions
* Step 1
First, heat half ghee in a pan. Add the nuts. Slow fry till golden. Remove on a paper-lined plate.
* Step 2
Then heat the rest of the ghee, add the rice, and saute for 5 minutes. Then add 1 cup of milk. Cook on low flame till rice is soft.
* Step 3
Then add 1 cup more milk and cook till the rice is completely cooked. Then add sugar, coconut, cardamom powder, saffron, rest of the milk and slowly cook till thick.
* Step 4
Garnish with prepared nuts and serve on all special occasions.
