Aam ka aachar/Raw mango pickle

#SD4 #week4 #Raw mango pickle #cookpad A mango pickle is a variety of pickle prepared using mango. It is very popular in South and Southeast Asia. These sour/spicy pickles are also available commercially.Here I have prepared kerala style raw mango pickle .

Ingredient

asafoetida

as per taste

2 tbsp

Sesame oil

1 tbsp

Lemon juice

1/4 cup

mustard oil

10 cloves

garlic

Cooking instructions

* Step 1

Combine chopped raw mango with 1/4 tsp turmeric powder and salt. Set aside for 2 hours.

* Step 2

Heat 2 – 3 tbsp gingelly oil in a kadai over medium heat. Splutter mustard seeds and fry few minutes. Add garlic mixture and curry leaves. Fry until golden brown. Switch off the flame. Add turmeric powder, chilli powder, asafoetida, fenugreek and mustard powder mix and add 1tbsb lemon juice.

* Step 3

Saute for a few seconds over the lowest heat setting. Switch off. Add chopped mango. Mix well. Finally add 1/4cup mustard oil. Taste-check for salt. Cool down completely and transfer to a clean air-tight container. It tastes best after one day. It will stay for a few weeks at room temperature.
