Kesar Baadam Cupcakes with Shrikhand Frosting

Indulge in a fusion dessert cupcake for Diwali that has the goodness of baadam(almonds) and a rich frosting made with hung curd and saffron.

Cooking instructions
* Step 1
Take a bowl.Add condensed milk,curd,butter,almond essence and whisk them till they are nicely combined.
* Step 2
Take another bowl and sift the flour and the baking powder.Now slowly add and fold the flour mixture into the wet mixture until entire flour is well combined.Add in the chopped almonds and soaked saffron strands along with the milk.Whisk everything well and the batter is ready.
* Step 3
Now line a cupcake tin with cupcake liners.Fill each cupcake cavity with one scoop of the batter.Now place them in the oven and bake them at 180 degrees or until a skewer inserted comes out clean.Once done remove from the oven and keep the cupcakes on a wirerack to cool.
* Step 4
To make the shrikhand,add hung curd and condensed milk in a mixing bowl and whisk until it becomes smooth in texture.Add the crushed cardamom,soaked saffron along with milk and continue whisking for 5 more minutes until you geta creamy texture.Shrikhand is ready,
* Step 5
Transfer the shrikhand into a piping bag with a nozzle of your choice and pipe the cupcakes with the shrikhand frosting once they are cooled.Garnish with hopped almonds and saffron strands. Kesar Baadam cupcakes with Shrikhand frosting is ready to serve.
