My Desi style omelette

Made with curry powder, garam masala and green chilli - there is plenty of spice to enjoy ,this is my way to start my sunday with its goes full on with a cup of strong doodh pati chai and family chit chat which we missed whole week as per our bussy schedule

Cooking instructions

* Step 1

Heat 1 tbsp of oil in a frying pan and add 1 clove crushed garlic, 2 spring onions, 1 medium tomato and 1/2 medium green chilli, Capsicum and cabbage chopped.

* Step 2

Cook for 2-3 minutes until soft. Add 1 tsp medium curry powder and 1/2 tsp garam masala and fry for a further minute.

* Step 3

Beat 2 eggs together in a small bowl and season. Add the egg mixture to the pan and swirl the pan until the omelette mixture is cooked underneath.

* Step 4

Carefully flip the omelette over and cook for 1-2 minutes, until golden. Scatter with 1 tbsp of fresh coriander (you may add coriander in beatan egg as well) and serve immediately.
