Mandia Jau with Sour Cream & Rajma Patties

"Mandia" in Odiya means Ragi. This recipe is really healthy as a breakfast which has lots of vitamins along with the infused fruits with honey and kidney beans patties, hung curd stuffing adds to the taste and health for everyday busy life.

Cooking instructions
* Step 1
Soak the ragi powder for 20 mnts in 2 cups of water. Drain the water. Pour the soaked ragi to 2 cups of water boiling with 1/2 tsp salt and stir it continuously till the Mixture thickens. The colour of the Mixture will change. ("Ragi Mixture")
* Step 2
For Rajma Patties:- Mash the rajma (Kidney beans) then add grated boiled potato, chopped onion, chillies, coriander leaves, rock salt and wheat flour then mix it properly. Make a dough out of it. Then take 2 portions out of the dough and make a shape of Patties. Then spread crushed cashew nuts on a plate and roll the Patties on it. ("Rajma Patties")
* Step 3
Pour oil on a pan and shallow fry it on both sides till light brown in colour. Then keep it aside. For hung curd stuffing, take hung curd and add rock salt, chopped onion, coriander leaves and red chilli powder. Mix it properly and keep it aside ("Hung Curd"). For Fruits infuse, heat a pan, add chopped Guava, honey, chilli powder (a pinch) and rock salt, and cook for 1 min ("Fruits Infuse").
* Step 4
For Assembling it:- add the Ragi Mixture into a ring mould and once the Ragi Mixture cools down, it will take the shape of the mould, after which discard the ring. Then add the Hung Curd Mixture over it, then place the Rajma Patties and add the Fruits Infuse over the Rajma Patties. Decorate it with mint, cranberry and almonds. Ready to eat.
