Hariyali Egg curry

#Win #Week1 In this boiled eggs are cooked in a paste of spinach and coriander leaves.

Ingredient

Food ration :

1/2 cup

spinach

1 inch

ginger

2 cloves

garlic

1/2 tsp

cumin seeds

Cooking instructions

* Step 1

Take a pan add eggs and water and boil in medium flame for 15 minutes and then peel off the shells.

* Step 2

Wash the spinach and coriander leaves. In a pan add water and blanch the spinach. Then in a blender add spinach, coriander leaves ginger, garlic and green chilles and make a smooth paste.

* Step 3

Add oil in pan, fry the eggs and keep aside. In the same pan add cumin seeds let it splutter then add onion and fry them, then add salt and turmeric powder and saute. Now add tomatoes and cook till tomatoes get tender.

* Step 4

Now add the spinach and coriander leaves paste and saute. Now add water and give a nice stir. Now add garam masala powder and mix.

* Step 5

Add the Eggs in the curry and cook in low flame for 2 minutes. Serve with chapati or rice.
