Steamed Mango fudge

Cooking instructions

* Step 1

Take a pan, add the milk and bring the milk to boil. When the milk has started boiling add lemon juice little by little, now the milk has started curdling, after 10 minutes take a cheese cloth and strain all the chena.

* Step 2

Run cold water to remove the sourness of the chena. Now squeeze the cheese cloth to remove all the excess water of the chena. Crumble the cottage cheese with fingers and keep aside

* Step 3

Now cut the mango and take out the pulp. In a blender add mango pulp and milkmaid and blend till smooth. Now in that add cottage cheese and cardamom powder and blend again to make a smooth mixture.

* Step 4

Grease a glass bowl with oil and pour the mixture and spread the top evenly with spoon, garnish with saffron and chopped almonds. Now seal the bowl with aluminum foil.

* Step 5

In a large pan add water and place a stand in it, boil the water, then place the glass bowl inside the pan, cover and steam over low flame for 35 minutes.

* Step 6

After 35 minutes insert a fork, if it comes clean fudge is ready, if not steam for few more minutes.

* Step 7

After steaming take out the bowl and let it cool completely at room temperature, then keep in refrigerator for 1 hour. After that cut the fudge in pieces and serve.
