Chickpea and quinoa lunch bowl

Let loose in the #cookpadkitchen for the first time I rustled this up in about 30 mins and was happy with the result. A nice light #vegan lunch to see me through the afternoon.

Ingredient

Food ration :

1 serving

Cooking time :

30 mins
1 teaspoon

ground cardamom

1 teaspoon

ground coriander

1 teaspoon

chilli flakes

1 clove

garlic

1/2 can

chickpeas

Handful

raisins

2 tablespoons

sweetcorn

400 ml

vegan stock

60 ml

quinoa

Cooking instructions

* Step 1

Grind the spices if they’re not already. Discard the cardamom shells. Add to a pan and toast for a minute or two.

* Step 2

Chop the onion and garlic and add to the pan with a little oil.

* Step 3

Once the onion has started to soften add the chickpeas, raisins and sweetcorn.

* Step 4

Add quinoa and stock and stir occasionally. Once the quinoa is cooked (most if not all the water will have been absorbed) serve immediately.
