Spicy red lentil soup
This is an adaptation of a Thug Kitchen recipe. The original called for lemon which I didn’t have in at the time so I opted for spice over citrus and since then it has become a firm favourite. I should probably actually try it with lemon one day... 🤔 #vegan #VeggieLife

Cooking instructions
* Step 1
Chop the onion, potato and carrot.
* Step 2
Fry the onion in oil until it starts to brown.
* Step 3
Add the potato and carrot and fry for a few more minutes stirring occasionally so it doesn’t stick.
* Step 4
Add the spices, salt, garlic and chilli.
* Step 5
Rinse the lentils and add to the pan along with the stock. Cook over a medium heat for about an hour, until the lentils break apart and the potatoes are soft.
