Vegetable Stock
Is from a Soup Recipe Book . I do have some Recipe books which I have purchased Online through Amazon Prime . Can make a homemade Vegetable Stock in other ways , such as using the woody parts of Asparagus etc. Or using the inside parts of raw Tomatoes . Potato peelings can give flavour. Carrot ends and peelings etc. The following Recipe will make about 1 litre
Cooking instructions
* Step 1
Heat the olive oil in a large saucepan. Add the onion, leek and carrot and cook on a low heat for about 2 to 3 minutes
* Step 2
Pour enough water (about 1 and a half litres) to generously cover the vegetables
* Step 3
Turn the heat up and add the garlic, peppercorn, celery and bay leaf. Bring to the boil and cook gently for about 15 minutes
* Step 4
Turn the heat down and simmer for a further 30 minutes
* Step 5
Sieve the mixture, discarding the vegetables (or find another use for them)
* Step 6
Use the stock for your soup, or store in a sealed container until ready to use. The stock can keep in the fridge for about 3 days or can be frozen in batches for future use
