Puranpoli (sweet stuffed rotis)
Traditional main dish made specially on festival days.

Cooking instructions
* Step 1
Wash and soak split-chickpeas for 2 to 3 hours in water
* Step 2
Place dal and add 3 cups water in a pressure cooker. Cook till three whistles on medium flame and keep on slow gas for two to three minutes
* Step 3
When pressure cooker cools open cooker and drain excess water by using Soup strainer, (this water can be used to make curry).
* Step 4
Now mash this dal with the help of ladle in the cooking pan
* Step 5
Now add jaggery mix well, put it on slow fire till most of water evaporates. it will take approximately 10min. depending on quantity it may take longer
* Step 6
Then mash this sweet mixture with by the help strainer. Puran will be collected in the bowl below the strainer. Add cardamom and nutmeg powder and mix well. The stuffing for the roti is now ready.
* Step 7
Knead wheat flour and maida using salt, oil and water. Dough should be very soft. Keep it for half an hour prior to making rotis.
* Step 8
Now take small size ball of kneaded dough and make a thick roti by using hands. Make a bigger size ball of puran that is stuffing. Stuff the puran in the roti using palm and fingers.
* Step 9
Roll the puranpoli gently by using rolling pin. Apply maida for easy rolling.
* Step 10
Roast this roti on medium flame using ghee till golden colour.
* Step 11
Similarly make all puranpoli and serve with ghee and milk.
* Step 12
