Cooking instructions
* Step 1
Salt and pepper the meat and brown each side in a oven proof pan (with a lid)
* Step 2
Take out the meat and add the veg. Keep stirring until the onions are caramelised
* Step 3
Add the stock, beer, mustard, tomato purée, and bay left. Bring to the boil
* Step 4
Add a little water to the corn flour and mix to a paste
* Step 5
Add the corn flour paste and cook for 3hr with the lid on at 140oC fan or 160oC normal oven. Turn meat half way through
* Step 6
After 3hr turn up oven by 20oC, take off the lid and cook for a further 30min
