California Farm Crab Meat Omelet
Spiced canned crabmeat, shallots, garlic, fresh chopped watercress and canned bamboo shoots in an omelette, covered with thick tomato sauce. Quick, easy, delicious. Called Fu Yung Hai in Chinese and Indonesian. Served Sundays for breakfast buffet in the Dutch Army.

Cooking instructions
* Step 1
In cast iron skillet, on low flame, make omelet: fry crabmeat with garlic, shallots and chopped bamboo shoots in sesame oil till fragrant. Mix with Tbs fresh chopped celery, or mint, or basil or watercress leaves, Tsp milk powder, Tsp sweet soy sauce, sambal pepper sauce, salt into 3 beaten eggs and fry gently on low heat till stiff.
* Step 2
In cast iron sauce pan, mix cup of boiling chicken stock, 2 Tbs tomato paste, pinch of sambal pepper sauce, Tsp of sweet soy sauce, Tsp of corn starch in Tbs water, optional 1/2 cup of fresh or frozen green peas, stir till thick. Place omelette on warmed plate, pour half of tomato sauce over center of omelette.
* Step 3
Fold omelette, cover top half with tomato sauce, serve with pickled peppers and pickled watermelon pieces. Enjoy.
