Different briam
Briam (Greek mixed vegetables) is very easy to make and very tasty. The feta cheese melts a little on top and yields a very savoury result.
Cooking instructions
* Step 1
Cut the tomatoes into a bowl, add half of the oil, then salt, pepper, sugar and mix.
* Step 2
Place them in the fridge for 1 hour.
* Step 3
Place the vegetables in a baking tray one by one (you don't have to degorge the eggplants) with the tomato on top. Bake in a preheated oven at 200°C for 30 minutes.
* Step 4
Interrupt the baking to add the rest of the oil and cook for an additional 20 minutes.
* Step 5
Turn off the heat and add the feta cheese, crumbled, on top and parsley (optionally).
