Agrelia (wild asparagus) with eggs

In Cyprus, we call the wild asparagus, agrelia! An amazing meze! The hard part of the recipe is foraging for them!!

Cooking instructions

* Step 1

Cut the spears of the agrelia brεaking them by hand into small pieces.

Pour the olive oil in a pan and add the agrelia immediately (you don't allow the oil to heat too much).

* Step 3

Let the agrelia fry (you shouldn't cook them too much, just until they are tender) and add the salt.

Add the eggs.
Image step 4

* Step 5

Mix so that the eggs are evenly distributed.

It's ready when it's like an omelette.

Serve with french fries.
