Bean soup in a clay cooking pot
Even though bean soup is not my favourite dish, I have to admit that this is extremely delicious. I have tried it in a village near Serres.
Cooking instructions
* Step 1
Soak the beans in water overnight.
* Step 2
On the next day discard the water and boil them in a pot until tender.
* Step 3
Sauté the onion in a frying pan and then add the tomato paste dissolved in a little water, the tomatoes, carrots, the bay leaf, salt and pepper. Boil the sauce for 15 minutes.
* Step 4
Then, place the beans in the clay cooking pot
* Step 5
And pour the sauce on top.
* Step 6
Cover and bake in a preheated oven for 30-40 minutes at 200°C.
