Best Battered Fish

Cooking instructions
* Step 1
Sift together the dry ingredients for the batter. Then whisk in the ginger beer and oil until smooth. Place in fridge for at least 20 minutes.
* Step 2
Cut the filets to your preferred size. Make sure all the filets are dry.
Lightly season the fish with salt and pepper. Place in the fridge for 10 minutes.
* Step 3
Heat the oil in a deep pan to a medium heat 180°C
* Step 4
Separately place each piece of fish in flour, cover them. Then gently shake of the excess flour.
* Step 5
Now dip each piece of fish in batter, coating them well and gently place them into hot oil.
* Step 6
Fry until golden brown, about 5 minutes, turning half way. Remove and drain on a rack or newspaper.
