Best Battered Fish

Cooking instructions

* Step 1

Sift together the dry ingredients for the batter. Then whisk in the ginger beer and oil until smooth. Place in fridge for at least 20 minutes.

* Step 2

Cut the filets to your preferred size. Make sure all the filets are dry. Lightly season the fish with salt and pepper. Place in the fridge for 10 minutes.

Heat the oil in a deep pan to a medium heat 180°C

* Step 4

Separately place each piece of fish in flour, cover them. Then gently shake of the excess flour.

Now dip each piece of fish in batter, coating them well and gently place them into hot oil.

* Step 6

Fry until golden brown, about 5 minutes, turning half way. Remove and drain on a rack or newspaper.
