Special Sweet Soup Udon

This is a special sweet-salty udon. If you make homemade udon noodles, try to make them on the thinner side. If you use udon from sukiyaki, it has an even richer flavor.

Mirin

30 ml

Soy sauce

Cooking instructions

* Step 1

Put just the sake and mirin in a pot and cook off the alcohol. Be careful of the jumping flames.

Add the sugar crystals, dashi soup, and soy sauce and simmer for 3 minutes. After 3 minutes, transfer to a container.

Make the hot spring eggs. Bring the eggs to room temperature. Bring water to a boil in a pot, turn off the heat, then add the eggs to the water. Let sit for 15 minutes.

Cut the onions. If you cut them diagonally, they look better.

Boil the udon in water, then rinse well with cold water.
