Special Sweet Soup Udon
This is a special sweet-salty udon.
If you make homemade udon noodles, try to make them on the thinner side.
If you use udon from sukiyaki, it has an even richer flavor.
Cooking instructions
* Step 1
Put just the sake and mirin in a pot and cook off the alcohol. Be careful of the jumping flames.
* Step 2
Add the sugar crystals, dashi soup, and soy sauce and simmer for 3 minutes. After 3 minutes, transfer to a container.
* Step 3
Make the hot spring eggs. Bring the eggs to room temperature. Bring water to a boil in a pot, turn off the heat, then add the eggs to the water. Let sit for 15 minutes.
* Step 4
Cut the onions. If you cut them diagonally, they look better.
* Step 5
Boil the udon in water, then rinse well with cold water.
* Step 6
Transfer the udon to a bowl, then top with a generous amount of the soup. Garnish with the chopped onions.
* Step 7
Make a well in the center, then break open a hot spring egg into the well.
* Step 8
The sweet-salty udon is ready.
