Elotes Mexican street corn

I worked on a taco truck and learned this easy tasty recipe

Ingredient

Epazote

Cooking instructions

* Step 1

Place corn in large pot with enough water to cover the corn. Add epazote and bring to a broil for 7mins or until kernels are tender.

* Step 2

Remove the corn and let slightly cool.

* Step 3

Using a pastry brush brush the corn with the crema. Use a lot of crema because some will melt.

* Step 4

Using a flat plate roll the crema covered corn in the cotija cheese covering completely.

* Step 5

Sprinkle the chili de arbo on the corn use as little or as much as you like depending on your tolerance level.

* Step 6

Garnish with cilantro and a squeeze of lime juice serve immediately. Enjoy 😉😉😉
