Roasted Tomatoes (on the vine)

Now that tomatoes are much cheaper than in the winter, I take every opportunity to eat as much of them as I can (especially when I pick them up fresh). More than slicing up to slap them on a toast, I enjoy roasting fresh tomatoes on the vine.

Cooking time :

15 minutes

Cooking instructions

* Step 1

Preheat oven for 15minutes at 180C. Place tomato vine in a baking dish. Lightly drizzle with olive oil and season with salt and pepper

* Step 2

Roast until the skin cracks and tomatoes run soft. Cooking time depends on the size of tomatoes (larger tomatoes cook longer and cherry tomatoes cook faster)
