Steamed Tofu with minced pork and eggplant
A quick and high protein dish made in minutes with a microwave. You can also opt to steam it over the stove for about 8 minutes :)
Cooking instructions
* Step 1
Mix minced pork, chopped shiitake, white pepper, shoyu, mirin and Chinese wine and allow mixture to marinate for about 30 mins.
* Step 2
Add minced garlic to sliced eggplants. Cover with cling wrap, leaving a little gap. Microwave for 3 mins on medium.
* Step 3
Cubed tofu and add over eggplant. Then spread marinated pork evenly over. Microwave for 3 mins 30secs on medium. Done!
