Chayote also known as Chow Chow or Bangalore Brinjal or Seema Vankaya in Telugu is a simple yet a flavourful and a healthy Vegetable mostly available in Winters. And what's better than to make this dish for wrapping up the Season with love.
I had made this as a simple fry for mealtimes on any given day. There are a number of variations that can be tried with this super awesome Vegetable.
I had made it for Breakfast as well as for the Tiffin box too.
It tastes super yummy and is largely a mix of Bottle Gourd and Brinjal. The best part is that it can be enjoyed even in Salads because it tastes so good and juicy. It gets done so very easily too. Therefore putting it to a multitude of uses is absolutely normal. This Veggie is a great choice for any day meals for all those innumerable benefits it offers.

Cooking instructions
* Step 1
Heat oil in a wide pan. Add mustard seeds at first. I have used both black and yellow seeds. Let them crackle a bit before adding the curry leaves bengal gram and the black gram. Fry them for a minute and then add the chopped spring onion and red onions both. Also add in the ginger-garlic green chilli paste as well. Saute all of that for about 2-3 minutes or until the onion is soft and done.
* Step 2
Now add the chopped chow chow as seen in the pic. Add the powdered spices as mentioned one by one. Mix well and cover. Cook on a low heat until done. Keep stirring a bit at regular intervals.
* Step 3
Garnish with chopped coriander and grated fresh coconut. Mix well and it's perfectly done. Don't forget to adjust salt before taking it off the gas.
* Step 4
Serve with rice and rotis both for a yummy meal. Enjoy!
