Onion and Beef Rump Roast Batch 16
Love this recipe to me the rump roast is the best cut of the bovines. Thunder and flavourful. Strawberry onion are extra large onion that are grown here in strawberry patches in Florida. Sometimes the have large 2-3 Acer fields, just for these onions. They measure 8 inch diameter on average. They are sweet onions. The 4-1/2 cups came from one onion.
Cooking instructions
* Step 1
Dice the big onion. Wash and slice the celery. Melt the butter and add the onions and celery. Sauté till translucent.
* Step 2
Dice the peppers fine. I used red, yellow, and orange sweet bell peppers.
* Step 3
Add in the peppers. Separate the caps and stems from each other and add into the onion celery mixture. Salt these to taste. Preheat oven to 350° Fahrenheit.
* Step 4
Add meat tenderizer to the roast. When the onions are disappearing add roast to a pan. Add carrots and potatoes, around the rump roast. Season the roast. Add the stock.
* Step 5
Spoon the onion mixture over the top of the whole pan. Quarter the yellow cooking onion and add to the corners.
* Step 6
Season with garlic and salt. Put into hot oven covered till potatoes are fork tender. Let rest 20 minutes with cover. Slice and serve. I hope you enjoy!!
