An easy one pot dish done in a matter of few minutes. This is a fabulous way to cook this versatile Lentils and Vegetable stew from South India. I personally prefer this method since it has all the benefits of retaining important Vitamins and Minerals without over cooking and destroying them in the process. I have used practically many Veggies but the choice is always yours regarding this. This is also a time saver for all the busy women out there and tastes fabulous.

Cooking instructions
* Step 1
Wash and soak both the dals for 2 hours. In a pressure cooker, heat oil and add black mustard seeds and shredded ginger.
* Step 2
Followed by asafoetida, curry leaves and dry red chillies. Now add sliced onion. Saute all of that for a minute or two. Now add all the vegetables. Saute these for about 3-4 minutes.
* Step 3
Add all the powdered spices too. Finally add both the soaked dals and tamarind pulp. Add enough water to cover everything. Adjust salt and pressure cook it for 5-6 whistles.
* Step 4
Let the pressure settle down before opening the lid. Cook on a high heat now. Add hot water to adjust the consistency according to your choice if required. Otherwise just simmer for about 4-5 minutes more.
* Step 5
Garnish with coriander leaves. Serve hot with plain rice, idli, dosa etc. Yum!
