Cheesy Rice Vermicelli or Sevaiyan

This one is yet another easy one which is done with Rice Sevai and Cheese. The rest of the spices used are absolutely simple and common one's. I have added a few vegetables of my choice. It's a lovely meal for Dinner anytime or even Breakfast on a Sunday. The best simple meal for any day. I have added Cheese for my kids but you can very well skip that and add only the vegetables. As it is Rice Vermicelli, it gets done very quickly and need not be cooked for a long time. It saves on a lot of time and is an ideal alternative on busier days. Your schedule need not be altered and you can still enjoy fresh homemade food. Well that's it. Happy Mealtimes! And Happy Cooking with Zee!

* Step 1
First of all, roast your Vermicelli in a tablespoon of Oil. You need to carefully monitor this and keep stirring it as required. Keep the heat on a low. Roast until it is light brown in colour. Set aside. As this is Rice Sevai, you need not do it if desired. But I did it to enhance it's taste.
* Step 2
Keep a cooking pot on a low heat. Add oil and curry leaves. Also add sliced onion along with shredded ginger. Saute for a while until the raw smell of the onions fade away. Add all the spices and the chopped tomatoes. Also do not forget to add sliced Capsicum. Saute until they are soft and mushy. Now add almost 4 cups of water. Let it come to a rolling boil.
* Step 3
Now add the roasted Rice Vermicelli and mix. Also add in shredded Mozzarella Cheese. Cover and cook until done for about 5-6 more minutes on a low heat only. Garnish with freshly chopped coriander leaves and roasted Cashews. Serve hot with boiled Eggs or as it is. Enjoy this lovely looking dish from my kitchen. Yum!
