Karela ni Chhal na Muthiya
With the non availability of methi, I made muthiya snacks using karela peels.

Cooking instructions
* Step 1
First, chop fresh karela skin as fine as possible. Mix in 1/2 tsp salt and rest for 5 minutes. Meanwhile, ready all the dry masalas.
* Step 2
Now squeeze out the bitter water from the karela peels and take in a big mixing bowl. Discard the bitter water.
* Step 3
Now, ready all other ingredients. Add in flours, malai and dry masalas. Mix well.
* Step 4
Add in 3 tsp oil and mix. Now add very little water and knead a smooth but medium stiff dough.
* Step 5
Rest the dough for only 5 minutes. Meanwhile heat 2 cups oil for deep fry.
* Step 6
Shape the muthiyas. Ready all and keep in a plate.
* Step 7
Deep fry in medium hot oil on slow gas. Do not touch immediately. Turn after 3 minutes, when the outer surface of the muthiyas is a bit done.
* Step 8
Fry well until golden red. Transfer into a plate lined with absorbent paper. Fry all. Cool completely and fill in an airtight container. These stay good for 1 month.
* Step 9
Enjoy tasty tea-time Or anytime munching snack, made from the peels usually thrown away, with family and friends.
