California Farm Cast Iron Chicken Coq-au-Vin Dinner
A French classic dish, you set a chicken on fire……… simply quarter a whole chicken, brown in a cast iron pot in butter, pour brandy over, boil and light with a match when the alcohol evaporates, then simmer in wine and chicken broth with mushrooms with shallots and bacon bits.

Cooking instructions
* Step 1
In cast iron dutch oven with lid, melt butter, quarter the whole chicken, brown chicken quarters on skin side only, 10 minutes.
* Step 2
Put browned chicken in pan on bed of chopped bacon, sliced mushrooms, sliced shallots, crushed garlic cloves, and laurel leaves, pour brandy over, bring to boil, light with match, watch till flames are out, 5 minutes. Hold lid of dutch oven ready in case you have a flare up flame to douse.
* Step 3
When brandy has burned off, add fresh or dried bouquet garni (see recipe), add chicken broth, wine, bring to boil, then simmer an hour with the lid on.
* Step 4
When fork tender, place chicken on a warm serving platter in warm oven. Boil down chicken sauce till thick, about 10 more minutes, dissolve 2 Tbs flour and Tsp of corn starch in 3 Tbs cold water, add to sauce to thicken, taste and add cracked peppercorns and/ or sea salt, drizzle over chicken on platter, serve.
