California Farm Buffalo Turkey Wing Dinner for 2
Frying one turkey wing, removing the bones results in two filling tasty dinners, because turkey wings are dark meat. Prepared as hot Buffalo Wings and served with fried red peppers, blue cheese dressing, home made french fries and apple sauce. Classic American comfort food.

Cooking instructions
* Step 1
Heat 4 Tbs unsalted butter in cast iron pan. Fry wing and two red peppers 18 minutes on each side. Rest, slice meat lengthwise in 1/4 “ slices, put back in skillet, dispose of bone in garden fermenter.
* Step 2
Add Tbs sweet paprika powder, cup balsamic vinegar, simmer 10 minutes, put on warmed serving platter, keep warm.
* Step 3
Slice potatoes in 1/4” slices, then slice in 1/4” strips, soak in water, dry with towel. Melt 2 Tbs lard in skillet, fry french fries till golden while stirring, ten minutes, lay on paper towel, sprinkle with rock salt, drain, keep covered and warm.
* Step 4
Mix mayo and blue cheese, buttermilk, greek yoghurt and dill weed, rest. Serve as dip for french fries and turkey meat.
* Step 5
Peel and core two granny smith apples, simmer with cinnamon stick till soft, serve warm.
