Carrot Kheer is a yummy, creamy dessert made by simmering cooked carrots with flavored milk & garnished with nuts. Carrot Kheer is made on special occasions and is quite easy to make.

Cooking instructions
* Step 1
Boil full cream milk in a separate pan and keep aside.
* Step 2
Wash rice and soak for 10 minutes. Now discard water and wipe and dry rice on the kitchen towel. Now transfer it in a mixer and coarsely grind. Keep it aside.
* Step 3
Peel, wash and grate carrots. Heat 2 tb sp Ghee in a heavy bottom karahi and stir fry carrots for 5-6 minutes or till its water evaporates.
* Step 4
Add sugar and cardamom powder and stir. Cook till sugar dissolves and mixed with carrots completely.
* Step 5
Now add milk in it. Let it come to boiling point. Keep stirring in between.
* Step 6
When milk starts boiling, add grinded rice and mix. Let it simmer on low flame for 12-15 minutes or till kheer starts thickening.
* Step 7
Chop dry fruits in small pieces and mix in kheer.
* Step 8
Serve hot garnished with chopped dry fruits.
